  • ½ teaspoon smoked paprika or other spices like cinnamon or cayenne

Method
 

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper, creating a smooth, even surface for roasting.
  2. Place the mixed nuts in a large bowl, ensuring they’re spread out evenly without overcrowding, to promote uniform roasting.
  3. Drizzle the olive oil over the nuts, then toss with a spatula or spoon until they’re lightly coated and shiny.
  4. Add the sea salt, smoked paprika, and honey or maple syrup, then toss again to evenly distribute the seasonings and coat all pieces thoroughly.
  5. Spread the seasoned nuts in a single layer on the prepared baking sheet, making sure they’re not overlapping too much for even roasting.
  6. Bake in the oven for 10 to 15 minutes, shaking the pan every 5 minutes to promote even browning and prevent burning.
  7. Watch closely as the nuts turn golden and fragrant, with a slight crackling sound indicating they’re crispy and toasted to perfection.
  8. Remove the baking sheet from the oven and let the nuts cool completely on the sheet for about 10 minutes, allowing them to crisp up further.
